Tortilla espanola. Spanish omelet. Cut onions into large chunks. Olive oil, salt. Fry onions till glassy. Cut potatoes into squares. Fry potatoes with onions, 15-25 minutes depending on quantity. Take the potatoes and onions out of oil. Use a cloth to better drain the oil off. Leave a little oil in the pan.
Scramble two eggs, more for large tortillas. Mix fried potatoes and onions with eggs. Flip tortilla with a plate. Flip again.
