Angie: Hi, my name is Angie and it drives me crazy when I see people buying boxed pancake mix, while it's so easy and much tastier to make them yourself at home. I am going to show you how with a really quick recipe that always works for me.
First thing I am going to do is combine the dry ingredients. We've got 1-1/3 cups all purpose flour, I like to use unbleached plain. We've got three tablespoon of granulated sugar, one tablespoon of baking powder and 1/2 teaspoon of salt and that's it.
I like to use a wire whisk to combine them so that you don't get a big lump of baking powder in the middle of your pancake, then you combine your wet ingredients. You've got 1 egg beaten, one-and-a-quarter cups milk, I like some skimmed milk, 3 tablespoons of Canola oil or melted butter. I like the oil because it is healthier for you and a quarter teaspoon of vanilla, I like to use pure vanilla.
So you just partially mix those up and then add them to your dry ingredients. Again I like you to add to it, your core ingredients together, but you don't want to over mix otherwise you will end up with tough pancake, a few lumps are okay and that's it. Once you're grilled, nice and hot you can sprinkle some water on to make sure that the whole thing is ready. I like to spray it once with some vegetable spray and wipe it down. That's the only time you need to grease your grill, one time, I like to make dollar size pancake so I get four per side.
Flop it right on the grill, smooth it out just a little bit. Let them cook and when you start to see bubbles on the top it's time to flip them. So they are nice and golden brown on the bar but you only need to flip them once otherwise you will end up tough pancakes. Let's take a couple of minutes. Once you flip them, you're ready to eat them.
