Anthony Caproli: Welcome to Art of the Drink my name is Anthony Caproli and we are back down in Loretto Kentucky at the Maker's Mark Distillery working with Natalie. How are you?
Natalie: I am great. How are you?
Anthony Caproli: Good. Natalie works here at Maker's Mark and she has agreed to help us out making a drink that I get a lot of request for. People always ride in and say “Anthony how do you make a Classic Manhattan.” My favorite Manhattan recipe uses Maker's Mark so I figured this is the best place in the world to make a Classic Manhattan. We are in a beautiful new bar, this is what you do right?
Natalie: This is what do?
Anthony Caproli: Fantastic. We are going to make in Maker's Mark Manhattan and we are going to make it up. So that mean I going to build it into tin I am going to set my martini glass first. Big cube ice in the tin and two ounces of Maker's Mark is going to get us started. And to that I am going to add a half ounce of sweet vermouth and finally, two dashes of bitters and then I am going to shake this whole thing up.
So a tin flask get it nice and ice cold. Alright, now a lot of people write in all the time and they say “Anthony I don't have all the bar tools that I have seen you use on the podcast, can I still make drinks the way that you do.” And I say “Yeah absolutely” and today what we are actually going to do is we are going to use -- this is called a Boston Shaker and we are going to use it without the stainer because bar people don't have strainers. This is just a shaker tin and a pint glass.
What we will do is you just break the seal a little bit and hold the pint glass up just a little bit. This is most easily done with cube ice because I am going to actually the shaker tin so as to stain the ice and what I am going to is just hold this right over the glass and rock it back and forth and so I get all the liquid out of the tin and into the glass. Alright and then I am going to top this off with normally I would use two cherries on a peg, but Dave Pickerell your Master Distiller showed me this trick. Actually I am using a Maker's Mark marinated cherry and I am go head and squeeze this right into the drink and you can see I get see I get some nice cherry juice in there and release some of the oils and then I am going to drop that right in the drink and that is my classic Maker's Mark Manhattan. Alright so first thing go out and set your glassware. And big scoop of ice in the tin.
Natalie: Ice in the tin.
Anthony Caproli: Yeah perfect.
Natalie: Oaky, now two parts Maker's right?
Anthony Caproli: Yeah.
Natalie: Okay. One, two.
Anthony Caproli: Beautiful, So you know about bourbon.
Natalie: Yeah I think I do. Okay now half of this.
Anthony Caproli: Right.
Natalie: Okay cut that off. Now bitters.
Anthony Caproli: Right, two dashes of bitters.
Natalie: Two dashes, okay, Now shake it up real good.
Anthony Caproli: Shake it up real good.
Natalie: Until it's all set.
Anthony Caproli: You got it.
Natalie: Got to shake it full.
Anthony Caproli: That is the key.
Natalie: Okay now this is the tricky part right. Okay what about right there?
Anthony Caproli: That's going to be perfect.
Natalie: Too much.
Anthony Caproli: No that's great. The idea is you want to make just enough of the gaps that the liquid comes out and the ice doesn't. That's partly you can rock it back and forth little bit just to make sure you get it all.
Natalie: Oh I make sure I get it all.
Anthony Caproli: Absolutely
Natalie: No waste in the Manhattan.
Anthony Caproli: That's perfect.
Natalie: There we go. Now the cherry and the trick is like you said just squeeze the cherry. I have never done this before, it's a good tip, it's a good tip.
Anthony Caproli: It's great.
Natalie: And then there is your perfect Manhattan.
Anthony Caproli: Fantastic, want to give this a try?
