Speaker: Today, we are going to make Beer and Bacon chili. Everyone's chili recipe has a little twist. Mine is a use of two of my favorite foods, beer and bacon. To make this chili you'll need one large onion, two large green peppers, a 28 or 29 ounce can of tomato puree, an eight ounce can of tomato sauce, one pound of stew meat or steak, one pound of ground beef, one can of pinto beans, one can of kidney beans, two cloves of garlic, two tablespoons of chili powder, two teaspoons of cumin, two teaspoons of red pepper, two teaspoons of black pepper, two jalapeño peppers and a dash of salt. You'll also need one half pound of bacon and one twelve ounce beer. You'll also need a crock-pot. This recipe fills a 4 QT crock-pot right up to the top.
Now let's get started. First, peel and chop the onion, then peel and mince the garlic. Trim your stew meat or steak and cut it into small bite size pieces. In a large frying pan combine the onions, peppers and garlic, hamburger and stew meat. Cook over medium heat stirring often until all the meat is browned. While your meat is browning, place a colander in the sink and pour in the contents of the two cans of beans. Rinse the beans with cold water and then allow them to drain.
In your crock-pot, combine the tomato puree, the tomato sauce, your beer, in this case, a home-brewed IPA in my chili and the chili powder, cumin, red pepper, black pepper and salt. Now add the pinto and kidney beans. Turn the crock-pot on low and stir your ingredients until completely mixed.
By now your meat should be browned. Remove it from the heat and pour into a colander in the sink to remove any extra fat and liquid. Slowly add the meat and vegetable combination to the crock-pot. Stir until all the ingredients are thoroughly mixed.
Now we are ready to add the bacon. In a frying pan, fry a half a pound of bacon until it's nice and crisp. Once the bacon is cooked, pat it with a paper towel to remove the excess grease. Crumble our chopped bacon into small pieces and then add it to the crock-pot.
As a last step, remove the seeds from two jalapeño peppers, chop the peppers and add them top the crock-pot. Now you just have to let it cook in the crock-pot all day for about 6-8 hours on low heat, stirring occasionally. This makes a hearty, spicy chili that goes great with aside a cornbread and a dollop of sour cream.
