Speaker: What I am going to do is create a really extravagant dessert in less than 20 minutes. It's going to be a lovely caramelized pineapple with a vanilla, lime and chili syrup. So the first thing we are going to do is we are going to make little sugar syrup and that's basically equal parts water and equal parts of sugar. We will just simmer that up. Once when the sugar dissolves then we will start adding some nice flavor into that. As we are waiting for that to dissolve, I have got a pineapple. Nice big one.
I am just going to clean it up using some scissors. So we are just basically trying to get rid of those dead little pieces at the end of each leaf. So that's looking nice and clean. Now to prepare, the first thing we are going to do is take that base off. We don't need that. Now, I want to keep the green part as part of my garnish. So I am going to cut straight through the middle of the pineapple. Then we will turn it around and we are going to do exactly the same, but this time the knife is coming down through the green part of the pineapple. So what you end up with is that. That's a really nice snapshot of a pineapple.
Now I am going to do exactly the same process in half again. So first through the pineapple, turn it around and down we go. Now the root of the pineapple isn't the nicest part at all. So I am just going to take that out, but I am only going to three quarters of the way alone because I want to keep that nice flowery part at the top the garnish. So that's the piece that we are going to charred off and caramelize really nicely.
So you can see that sugar syrup has dissolved nicely and that's just going to form a little sauce that we are going put over the top of the pineapple. So I have a lovely fresh vanilla bean here. I am just running my knife along it lengthwise and that really is incredible. So whenever I put that into a sauce, I am just going to scrap it out with my knife into sauce. I will also put the whole vanilla bean in there. Now, what's going to happen is all those little black specks are going to come out and they will be all the way through our sauce that we split up a pineapple. They are going taste incredible.
Now mix ingredients, a little chili. I am using the nice little green chili here. I am just going to cut them lengthwise, take out the seeds because we want a little bite of this dessert, but we don't want it to blow your head off and be really, really spicy. If you have never had a sweet dessert with a little bit of chili, this is something that you should try because it is a little bit unusual, but it works really, really well because the heat of the chili just cuts through sweetness and you got a lovely little balance.
So that chili goes into my syrup. What I love about the dessert is that it's nice and light. It's a fruit and that's sort of really, really well cut through it very nicely. Now, I am just going to finish it with one little twist which is a little squeeze of lime and again along with the chili that's going to cut through the sweetness perfectly. So that chili syrup is dissolved nicely. I am just going to take that off the heat and that's finished. We will dress our pineapple with that when we are done. Now, the next step is a lovely big high heat. I have got a charcoal pan in there and we are going to charcoal a pineapple. I have got quite large amount of butter. I am just going to let that dissolve nicely and I am making a little caramel. So little bit of brown sugar in there.
That's going to help to caramelize and get some great color on that pineapple. It's moving around. Now, what's you are going to find, whenever this pineapple cooks in that sugar you just move your sugar around, and you can see it has started to caramelize there. You are going to place in there like that. Now what's you are going to find is whenever that pineapple starts to cook it's going to release some really nice natural juices and they are going mix in with the brown sugar, the butter and we are also going to do add a little bit of booze and in a second which will create a fantastic flavor.
So those have been in there for about a minute, look at that incredible color. That's caramelizing up really nicely. We will turn them over and do exactly the same on the other side, just for about a-minute-and-a-half, very, very nice indeed. Now at this stage I have got a little bit of cognac, you can just as easy use a nice dark rum, may get a little bit Bacardi whatever is handy. Be careful, you pour that over the pineapple. All I am going to do just blend it ever so slightly. You can see those flames. That's basically the alcohol burning off and that alcohol will incorporate itself really nicely into the pineapple. Those to me -- I am just tossing them a couple of times in that lovely liquid. Make sure they are nice and evenly coated. Well that to me looks like really nice perfect dessert.
The important thing here is that you serve them up practically immediately. So it's looking full of color that little pineapple. Over the top goes our nice little lime, chili and vanilla syrup. We put a little bowl of vanilla ice cream on that and it's ready to serve. I love this because it's such an easy dessert to make. You don't have to worry about enough different things, bake it in the oven. That's a 20 minutes process that leaves your guest going wow! What a dessert.
