Speaker: My name is Justin Fredger and today I am going to make mayonnaise in a food processor. Making mayonnaise is very simple and can be done. Usually you don't have to buy the miracle whip or any other. Simply just start with two eggs, the yolks of two eggs. So you separate the egg, break the egg. Put one yolk in the food processor, do the same with the second egg. Put the second egg in the food processor. Now, I am going to add a pinch of salt. One tablespoon of Dijon mustard. At this point we have the egg yolks, the mustard as well as the salt in the food processor.
Then after the side, I have a half a cup of canola oil that I am going to use to emulsify with the egg yolks and the Dijon. So I am going to get the food processor started. I am going to let that get nice and creamy. So I am just going to start beating the eggs and blending the mustard and it's basically making this paste. So I am going to let that go, to let the eggs nice and beat. Once the eggs take on this thick creamy texture, I am going to slowly start adding a half a cup of the the oil.
The reason why I added very slowly like this is because I want the eggs to take on the oil. I don't want it to become too separate entities, but rather blend into one entity, and which will be the mayonnaise. Once I finish, you can see that the eggs and the mayonnaise have blend together to create a uniform substance. This is the actually the overall mayonnaise. Now, you can try it to see if it needs anything else. So a lot of times, people like to add just the squeeze of lemon and you can do that by taking a half a lemon, with the spoon and a strainer to make sure you don't get any seeds. And just take the juice of the lemon to just give it a little bit of a lemon zest.
Blend it in just to tab longer, so it takes on the lemon flavor. But you don't want to blend it too long, because if you over blend it then the oil and the eggs are going to separate. Okay, at this point you can see that the eggs and the oil have come together as one substance as well as the lemon. Now, I am screening it in and here is basically a mayonnaise.
