Noel Macapagal: Alright, now that you had our spicy tuna roll, we are going to abbreviate things and show you the quicker and easier way to do sushi. Let's see, we have gone over the basics, we have gone your Nori pad, so let's revisit our half sheet of Nori. And now we are going to do what's called a Hand Roll. Hand roll is the best kind of roll to do at home. If you want to have the hand roll party all you need to do is get your Nori pad, get a whole bunch of these, figure out how to make the sushi rice and then begin by compiling your ingredients.
Here at Raw we like to do a lot of happy hour hand rolls. When we get a lot of people coming in asking everything from Hamichi, cassava, avocados, scallions, even spicy tuna melts. But let me show you the basics using our California roll. Let me show you how to put together a roll that requires absolutely no use of a knife. Your rice, your Nori, clean board and again the ingredients as referred to earlier.
So we take about – I am going to dab my hands, get it wet, cut off a bit of rice, I am actually going to use half a portion of the rice. So with these two bits of rice I am able to two hand rolls.
So first all we are going to take a look at our pad and then simply at center I am going to go the left hand side of the Nori pad and I am going to use the same technique as both side of it but this time I am just going to disperse it on to half of the pad. So left side rice, take about a small pinch of the rice, dab it to the upper right hand corner over there and you will see why you are going to need this bit of rice at the tail end.
Now if somebody wants a California hand roll, you are just going to you’re your ingredients. Get a little bit of cucumber. Press it from 2'O Clock to 7'O Clock. Little bit of crab mix, now this is imitation crab mix with a little bit of mayo in there. You can make your own, add a little bit of vegetables, add a little bit of spice. And then what I call a scored avocado. This is a quarter avocado, scored for ease of in your hand roll party.
Peel it out in it has its own little container. At this point I am going to use just two three pieces of avocado and put the rest back. Pop that in there and now comes the hand roll. Drip off these, pick it up, cup it in your left hand. It's going facing me like this. And I am going to take the lower left hand tab without the rice, I am going to bring it up to this upper corner. At the same time I am going to get my fingers, I am going to make a little sushi cone.
Now we have been calling this the Burrito sushi, I would like to keep it in the traditional hand roll, and we are going to call it California roll, in a minute. So thank you for joining us. That was our spicy tuna roll. This is Noel in Raw Sushi & Island Grill and Okane on the Hill.
