Speaker: This Black Bean Salsa makes a great complement to grilled fish, burgers and barbecued chicken.
First, in a medium bowl combine half of the minced onion, a quarter cup of fresh chopped cilantro and mince one medium Jalapeño. Here we are keeping the seeds on for a little extra kick but you can remove them if you like. Then add one 15 ounce can of black beans rinsed and drained, season with salt. Then add the zest from one lime and the juice from half a lime and half a teaspoon of orange zest. Now just peel the orange and add it to the bowl, peel the orange removing all the pith as it has a bitter taste. Use a sharp knife and cut on either side of the membrane releasing the fruit. Then squeeze the juice into the bowl. Now mix to blend all the flavors.
