Ingredients:
450g/1 lb chicken breasts
60g/4 tablespoons vegetable/olive oil or ghee
225g/15 tablespoons curry base
150g/small pot single cream
15-30g/1-2 tablespoons desiccated/grated coconut
15-30g/1-2 tablespoons white sugar
Heat 4 tablespoons of oil or ghee. Add the chopped chicken. Stir-fry until it is sealed. Add the curry base, continue to stir-fry. Add 1-2 tablespoons of sugar. Add 1-2 tablespoons of coconut. Add small pot of single cream, stir well.
Return to simmer. Cover, on a low to medium heat. Uncover and stir well. Continue to simmer, stir often. Check tenderness of meat. Cover, and continue to simmer.
Uncover and stir. Check meat is tender and cooked properly. Sauce should be thick in consistency.
Once the meat is cooked, remove heat and transfer to a serving dish.
