Jennifer Bushman: Nothing is more simple than adding a few basic greens, tossing them lightly with the home made dressing and serving it as a delicious fresh salad. Most of us get our greens now from the bag so begin first by talking the greens, soaking them in cold water and then letting them dry. You can do that in a salad spinner or in a towel, then place the greens into a bowl. To make a simple dressing, begin with the little bit of Dijon mustard, you could use a Grainy mustard even if you wanted to, some red wine vinegar, vinegars will last in the pantry for about an year and then some oil. Just toss this slowly, so that you can thicken it, as it goes. That ways, as soon as the thickness and taste you want, you can stop adding the oil.
Finally, make sure that you season the green because by seasoning them it will actually bring out the sweetness in the salad. So, use a little bit of salt first and then some freshly ground pepper. Toss it lightly, you don't want to add too much dressing because we still want to have the flavor of the green and then you are ready to serve.
