Pace: Hi I am Pace, The Green Girls food Guru; and you are watching the green girls TV. TheGreenGirls.com, Today we are going to make hummus with the wholly pita points, for the ingredient’s you will need, one cup of chickpeas, a quarter cup of tahini, a quarter cup of extra virgin olive oil, two teaspoons lemon juice, one tablespoon cumin, a pinch of white pepper, a pinch of paprika, salt to taste, six whole wheat pita rounds, a sprig of parsley, and a clove of garlic. So first lets get started by cooking our chickpeas, two cups of water and my stove pot here I am going to add the beans and these are fresh sprouted as you can buy dry beans that’s fine to and just make sure you soak out for about 6 to 8 hours so that its soft and strain the water and then cook them in fresh water with the fresh beans like this it will take may be 30 minutes for them to become soft and tender, start toasting our pita points so I have got 6 stacked up here wholly is really, really delicious but of course you don’t want have to get wholly, so start puckering them in half, and then into quarters and then into eights its going to arrange them on a sheet here bring it them on a single lawyer because, we are just going to drips little bit of olive oil and salt on top. Then I kind of hold my finger over the top so I don’t get too much, generously salt these, toast it through so that every little pita points get equal amount, isn’t jealous of their neighbor.
I pre-heated the oven to 375 so It’s going to and here for about 15 to 20 minutes until they are crispy, crunchy and brown. We are going to mix together the tahini with the lemon juice this is what we will add in to the puree chickpeas once those are done cooking cumin and also some white pepper put that together and salt to its almost going to form like a paste. Now we are going to pertain some of the water that the beans have been cooking in to spin this out so we don’t have to keep adding so much olive oil to it just really fattening al right so the wholly pita points are done and ready, so we are going to set them over here to cool down I’ll make the hummus, so you got the chickpeas that have cooked and they are nice and tender and I saved about half a cup of the broth to fill up the hummus and make it nice and creamy we are going to crush the garlic clove straight your knife like that remove the skin and then cut off the root end and that goes first in the food processor and just skip the mincing process then next we are going to put in the chickpeas so nice and steamy hot you don’t want to serve hummus hot as we’ll let us mixture the cool down over it, tahini and with these spices, olive oil its always handy to have a little spatula here and until it start coming together, the vegetable broth don’t forget some salt for taste. Let’s turn it out Paprika on top just for color the sprig parsley set this down in the middle and let’s go start grabbing in the pita points and arrange them around the hummus.
