Perna: Hi, welcome to watchmojo.com, I’m Perna your host, we’re going to be continuing the beverages series and today we’re going to be talking about wine. I’m here at the Whiskey Café, we are talking to Simon and we are going to be discussing how to store the wine, how to serve it, good food pairings and wine making processes. So Simon how can you tell just by looking at a wine, how old it is or what region it comes from, or even the techniques that were used to make it.
Simon: You see the rim around, for a young wine it's going to be Carmen red. The older it gets that rim is going to get more orange shades, that’s what make an old wine.
Perna: And when you’re swirling the wine on the glass, just why do we do that to begin with when you want to smell it.
Simon: It will be easier to smell some other aromas. If you pour a wine right away and you smell it, and after you swirl it and you smell it again, it’s going to smell different. The oxygen will affect the wine.
Perna: When you’re drinking it, how can you tell how old the wine is?
Simon: Once again texture, a full-bodied wine, when it's young, you’re going to have a lot of tannins. Tannins are sort of the antiseptic of the wine. That’s what allows the wine to age. So when the same wine is going to be like 10 years old, all those tannins are going to be so smooth. You will loose all the strength of it and it becomes like a velvet.
