I think of bread as fire. Fire to me is about a passion, a desire.
My name is Alan Wong. I am the Chef owner of Alan Wong’s Restaurants.
The biggest award ever received was being recognized as #8 in America by Gourmet Magazine.
One of my goals is to give our guests what I call I true slice of the life. Try to serve them things we grow up from our land and fresh fish from our ocean.
So when you come to Hawaii, we want you to eat Hawaii.
The food definition of Hawaii we in the cuisine is it is a contemporary salad cooking in Hawaii today that borrows from all of the ethnic influences you find in Hawaii.
Today, we are making dish called Chaki Tartar Bahi. It is a Nahi Poke, served with Avocado salsa and wanton chips and chili pepper sour cream.
Poke literary means cube, so you will see fish cubed up, tossed. It is like a salad.
Today, it is evolving to a whole international appetizer and they are getting very, very creative at Poke.
I think the local people in Hawaii love to eat. You know, people plan their days in around where they are going to eat for breakfast, lunch and dinner.
My advise to visitors, get out into the community and not be afraid of trying different things, that is what a real culture is.
