Allen Smith: The price of fresh produce is determined by a number of factors. Good weather and availability being just a couple. Then of course there are fruits like these avocadoes which pound for pound are more expensive than other produce. This is because they are often so few harvested that the price is high. After all, it takes 18 months to bring avocadoes like these to market.
At the Fairview Road Ranch in Soledad, California, Kirk Williams and his family grow about 100 acres of avocadoes.
Kirk Williams: With avocadoes starting out in the spring, there’s always a crop on the tree and there’s a bloom that takes place in about March or April of the year. And that is the crop that you’re trying to keep the pest away from growing through the summer, and then you’ve also got to get it through the winter and up until the following September or October where you actually harvest it. Give them some ripe avocadoes for tonight. And I wish there is a way to maximize that possibility because we handle them all there, and they’re rock hard. Getting into the ultimate consumer when it’s ready for tonight’s meal is a real challenge.
Allen Smith: There’s really no substitute for delicious avocadoes like these after maturing slowly on the trees for so long, it’s no wonder they are such a delicacy.
