this video gives the wrong info. The girl is making the foam with a whipped cream Nirous dispenser. She is saying you need a co2 dispenser which will not do the same thing. This should be corrected.

Moore: Hi! I’m Moore with Morton’s Steak House. Today, I’m going to show you how to make specialty cocktails. Right now, we’re going to see how to make our Heavenly foam. The tools and the ingredients that will need to make the Heavenly foam is a CO2 Canister which can be purchase at any home specialty food store, 5 ounces of pasteurizes egg whites. We want to want to use pasteurizes egg whites because you don’t want to consume raw food, 5 ounces of Chambord, and 5 ounces of raspberry puree and the juice of one lemon. You want to puree in the egg whites and Chambord, the raspberry puree, the lemon juice. It does not have to be in that order and will going to put the lead on the canister secure it nice and tight and put the CO2 cartridge, screw it on and you hear a slight hizz. There we go, you want to shake it. I’m going to use some a canister it’s important to hold it right upside down. Hold it on the side of the glass and there we have our heavenly foam. And coming up next, we’re going to show you how to make a Promegranate Martini.
