Hello, I’m Davide Megna from Amici Miei Ristorante and we're showing you how to make pizza today. The first step is gonna be how to make the pizza dough. We’re gonna start using 2 pounds of unbleached flour. We're gonna pile it on a table and we're gonna make a big O in the center. Then, we're taking a bowl with 1 pound of warm water. We're gonna add fresh yeast and salt. We're gonna work the water and try to melt the yeast with our hands. We're gonna mix everything until the yeast is completely melted into the water. After melting the yeast and the salt into the water, we're gonna pour everything in the middle and we're gonna add our extra virgin olive oil. We’re gonna start mixing our dough, start mixing the flour that is inside our ditch and then we can start also mixing a little bit of the flour that is outside using our hands and with the help of a spatula. The spatula is gonna help us pick up all the flour and put it into our dough. Now, we wanna work the dough with both hands and enough strength to make a nice smoother dough. Now you can use your hands to make the dough or you can use a mixer and use the attachment that looks like a hook and that will be much easier but we are doing it today the old fashioned way.
Okay. Now our dough is ready and we're gonna let it sift so there is enough time to rise and we're gonna let her rise until it double its size. In order to prevent the dough to dry while rising, we're gonna cover it with a piece of plastic film. We’ll cover it very well all around it. Now, we're gonna let our pizza dough rest in a warm place until it doubles its size.
Our next step is shaping our pizza balls. So, we have our dough that has raised and doubled its size. We're gonna uncover from the plastic film. So we're gonna cut our pizza dough into approximately 8-ounce pieces and we're gonna start shaping our pizza balls, turn it inside then we're gonna put it on our table and let it roll until we obtain a nice rolling smooth pizza ball. So, the pizza ball is ready. I’m gonna sit it in a tray and cover again with a plastic film, and we're gonna let the pizza dough rise again, one more time, in our refrigerator for about 24 hours before we open and start making our pizza. That way, letting it sit and rest for a long time in the refrigerator, the pizza dough comes out much lighter and much easier to digest.
So, that’s how we shape our pizza balls and in the next segment, I’m gonna show you how to open a pizza and put in together the toppings and then cooking our pizza in the oven.
