Hi! I am chef Peter Tucker from the Devils Grill Restaurant at Wintergreen Resort in Virginia. Today we are going to be showing you how to make Shrimp and Grits with tasso ham. It's a low country dish and these are the ingredients that you will need.
For the grits, you will need two cups of milk, two cups of chicken broth, one stick of butter, one cup of stone ground grits, and three quarters of a cup of parmigiano reggiano.
For the shrimp in sauce you will need 14, 30 to 40 cal shrimp, peeled and deveined, three tablespoons of leek rounds, two tablespoons of tasso ham, two tablespoons of tomato skins diced, two tablespoons of fresh chives, one cup of chicken broth, a few shots of Tabasco, and one stick of butter cut into pieces.
Also the tools you’ll need are one small whisk, a wooden spoon, one two quart saucepot and a saute pan. Please remember that safety is always important, and be aware of the fire and boiling liquids on the stove.
Let me tell you a little about myself. I came here from Wintersburg, five years ago to work at the Wintergreen Resort, the Devils Grill, and I became the chef here two years ago.
Now let's go back to the kitchen and prepare our shrimp and grits with tasso ham.
