My name is Davide Megna. I’m a chef and co-owner of Amici Miei Ristorante. I’m gonna show you how to make pizza today. We're gonna start from making the pizza dough. I’m gonna show you how to make the pizza sauce and then we're gonna put together our pizza and cook it.
Our pizza dough require for about five to six people, require about 2 pounds of unbleached flour, 1 pound of warm water, ½ ounce of fresh yeast or dry yeast, ½ ounce of salt, fine salt and 3 ounces of extra virgin olive oil.
For our pizza sauce, we're gonna need some peeled tomatoes, some oregano, extra virgin olive oil, salt and pepper and some fresh basil.
The toppings today are very much of spring topping. We're gonna use fresh mozzarella, fresh grilled asparagus and fresh grilled baby artichoke hearts, black olives and smoked ham.
As far as the tool goes for the pizza, you don’t really need many tools. You can make the dough either with you hands or using a hook in a mixer. Then, you’ll also gonna need a pizza peel to pick up your pizza and put her into the oven. Safety wise for making pizza, you don’t have to worry about many things except for the oven that you may use is gonna be extremely hot. In this case, today, we’re gonna use wood burning oven that reaches a temperature of 800-900 degrees. At home, you may not have this kind of ovens, you can use a convection oven and a pizza stone at about 500 degrees.
