Thanks for checking out FixMyRecipe.com. I’m Chef Billy Parisi and our new fix actually goes to quite a few people. I made a lemon curd tart not too long ago, even gave people the recipe. For some reason they still can’t make it. I’m going to walk you all through so you guys can get all right back on track.
The first thing we need to do is make our dough, and if you want to make the best dough known to man, go check out my pecan pie video. Once the dough is made, what we need to do is roll it out with a little bit of flour onto the surface. Next, we’re going to form it to our pan. Put on parchment paper, and some beams to hold it down because we have to part cook it for 20 to 25 minutes.
This is perfect timing because once our pie crust is in the oven, we can make our filling. So in a double boiler, we are going to whisk together our sugar, eggs and lemon juice until it’s pretty thick. It takes about 10 minutes.
Alright, it is absolutely perfect. What we’re going to do now is to pass it through a really fine strainer to make sure all the lumps are out. Alright, now we’re going to whisk in our butter and our lemon zest. This already tastes so good. What we need to do is get it to room temperature before we pour it in our pie shell. In the meantime, let’s get our fresh berries ready and let’s heat up some apricot preserved jam, we’re going to brush those berries, make this pie just glisten.
Alright, everything is coming together so nicely. Let’s go ahead and pour in our lemon curd batter right into that tart shell. Then we’re going to let it cool. Don’t forget to cover it. Next, we are coming back and we are going to put all these fresh berries right on top. It’s going to look absolutely beautiful.
As you can see it looks so awesome, and it’s perfect on the summer, Fourth of July, you’ve got red, white, and blue. It’s all ready to go. Better yet, it tastes so good and it’s really light and really refreshing minus all the sugar and eggs, of course.
