Lemon-Parmesan Broccoli
Now I’m going to serve one of my favorite all time favorite side dishes which happens to be roasted broccoli. It's simple and it’s easy. Now when you boil broccoli, what you do is you extract all the delicious flavor into the water and then you pour the water then you drain and your broccoli actually needs a lot of salt and lots of butter just to give us some taste. Now when you roast broccoli, you actually condense all the delicious flavor and it’s so easy to make.
Alright, so I’m going to take the broccoli. I’m just going to trim off the bottom woody part. I kind of cut an angle that’s going to give the broccoli some nice shape. Take the broccoli and cut it in half and I cut the housing half. It’s a really nice simple shape. It almost articulates the natural broccoli itself. Then we’re going to take these guys, cut them up, and you stock them as much as you bear.
I want to drizzle with some extra virgin olive oil well just like that. Alright, nice healthy dap of salt right on top to put out some of the sweet flavors. Alright, put some fresh crack pepper. And then as we go into the oven at a relatively high temperature, we’re talking about 400 degrees because I want to roast it. I want to blast it with some high temperature. Alright, fill it in. alright, it’s a one shot deal.
Our broccoli is in our oven. It’s getting nice and crispy. Pull this out of the oven. It looks delicious and it’s so simple, alright broccoli, olive oil, salt, and pepper. Now we’re going to give it a little possess with some really good parmesan or reggiano cheese.
Alright, so we take our cheese, we grate it all over the top of broccoli, partly cloudy for the 80% chance of snow all over the broccoli. Now what’s going to happen? We put it back into the oven. The cheese is going to melt. And not just melt but it’s almost going to start get crispy and form like a little crunchy lettuce work around the broccoli, really beautiful. I’m filling it in. we made roasted broccoli that was showered with really good parmesan reggiano cheese. That’s really delicious. I’ve never met a child that doesn’t love broccoli and cheese. This is going to be a home run.
