Lentil Soup Recipe
Audra Lowe: Soup is a great comfort food. But before you can open up that can. Listen up in today’s Better Bites Jennifer Parillo of In Jenny’sKitchen.com introduces us to a quick easy lentil soup that the whole family is going to love take a look.
Jenny: So today we are going to make Lentil Soup, it is winter time, it is great to come home to a comforting bowl of hot soup. If you don’t have time to make some over the weekend, you can have Lentil Soup in about 10 minutes. The first thing we are going to do is we are going to heat about one tablespoon of olive oil. And we have our pressure cooker set on the sauté feature and to that we are going to add about two onions better than chopped.
And we have about three carrots that have been diced. And one clove of garlic that has been crushed. We are just going to cook that for about a minute or two just until it releases a nice fragrant aroma. And we are going to season with a little of salt and some fresh ground pepper. Again we should stand up to whatever your taste is and I have one cup of canned crushed tomatoes. And I have three cups of water and we have one bay leaf. And then we have one cup of lentils, when you measure up your lentils, you just want to pick them over and make sure that they aren’t any small pebbles. It happens a lot of time a thing that are being a little rock or something in there, so you just want to pick them over first.
And done, we are going to let the pressure cooker do its work. Put your top on and make sure it is nice and secure and then we are going to put it on high pressure and we are going to cook it for 10 minutes. And you see that time to put the salad together or make a little bit of garlic bread to serve with it.
It is about for 10 minutes, you have a nice homemade Lentil soup and I like to serve it with a fresh grating of parmesan cheese and here you go, it is all done enjoy.
