Karen: We’ll slice our potatoes in have lengthwise this will help the potato’s cook more quickly and evenly in the microwave.
Lisa: And you know what else is so great Karen is the time saver you don’t have to peal the potatoes.
Karen: That’s right. Okay, next, we’ll pour a half a cup of milk and this will allow the potatoes to cook more quickly by creating steam in the baker.
Lisa: And now, let’s put the lid on the baker, place it in the microwave and cook it on high for 11 minutes. We’ve removed the baker from the microwave for the next step.
Karen: Right, now what we’ll need to do is to rotate the potatoes so that they’ll bake more evenly. What we’ll do Lisa is we’ll move the centered potatoes to the outside and the outside potatoes to the center.
Lisa: What a great tip Karen, otherwise the potatoes on the outside would be over cooked and the potatoes on the inside would be under cooked.
Karen: Right, now, we’ll put the potatoes back in the microwave for an additional eight to 11 minutes, so that they can finish cooking. Okay, now, it's time to mash the potatoes.
Lisa: This is great Karen. I can’t believe how easy it is to mash the potatoes with the skins on.
Karen: And you know, leaving the skins on will also give the chowder more texture. That’s looks great, okay. Now, that our potatoes are mashed, let’s go ahead and add the remaining ingredients.
Lisa: Okay.
Karen: I'm going to take four ounces of softened creamed cheese and we’ll whisk that in our classic batter bowl with the stainless whisk until smooth. Next, I'm going to go ahead and slowly add the milk. Just a little bit out of time.
Lisa: You know it's important to add the milk slowly Karen to the cream cheese mixture to ensure that it incorporates and then smooth, otherwise it could come one piece.
Karen: Okay, now I'm going to add the cream cheese mixture to the potatoes along with two tablespoons of butter. We’ll cover and we’ll place this back in the microwave for three to five minutes. Now, let’s add a few finishing touches to our cooked chowder. I'm going to grate four ounces of cheddar cheese, directly over the chowder using the rotary grater.
Lisa: The rotary grater grates the cheddar so thinly that it will start to melt right away.
Karen: Well, let’s go ahead and add some sliced green onions and some salt and pepper. Now, we’ll just go ahead and stir this until the cheese is melted.
Lisa: You know what, this absolutely looks delicious.
Karen: It does.
Lisa: And it's so easily prepared in the microwave.
Karen: And you can add your choice of additional toppings if you’d like. We have chopped bacon, sour cream, broccoli florets, and even some addition cheddar cheese.
