May Clee-Cadman: Amazing on pastries started about 4-5 years ago, I was working with someone else who make wedding cakes, well like if she just worked from home, but didn’t want to kind of expand any further, so I think I took about 20 times something I really love to do, but so you grow from being a bit of a hobby and you turn into thriving into a business.
Working from home for me is actually perfect I’m fortunate enough to have a place that means I can work from home, I’ve got a great workplace, I’ve got a great working space, and I’ve got somebody who comes in and works for me which is absolutely brilliant.
A working day, I’ll get up at probably 7-8:00, check my e-mails, make sure I know what I’m doing for then day in terms of baking; and we just got baking up, we have, the girl works with me and we have very great working relationship; and then we just have a lot of fun.
That one needs shukopennies, so we’ve got to get on the shook of pennies, so we’ve got to get on the shook of pennies probably this afternoon or tomorrow, and then she’s not having any sugar flowers, she’s just having fresh flowers; this ones’ going to be quite good fun actually, cause it’s kind of all in Indian colors, it’s about latte on it, decorating
Girl: So the couple can eat the cake then
May Clee-Cadman: No, not the couple; the decorative sugar lace in kind of bright oranges and gold.
I think the bride would come into mazy (--), because they want something quite traditional; I’ll always use elements from their dress to flowers, colors and themes that they’re having. But I do a little bit of a twist for instance, if someone’s having a white wedding, it might be that I do in all white cake covered with sugar flowers but think of white polka dots on as well, something that’s it’s called traditional in it’s value but with just a little bit of quirky twist.
Let’s go see if this one’s ready; perfect. I make all sorts of cake flavors, I’d say that the favorites are vanilla sponge with the jam and butter cream, but I make absolutely anything that the bride wants, I do banana, almond, orange, traditional fruit cake, carrot cake, I mean pretty much anything; and if the bride or groom has a favorite, then I’m more than happy to check out all the recipes as well. So that the cake itself have got the feeling of birth of the wedding cake is as important, if not more important than the design because people got to eat it; first and foremost, a cake is a cake, and it’s to be eaten.
The moment I’m making a 12-inch round vanilla is for wedding on Saturday, it’s now Monday afternoon, so we’re getting all of the baking done today; so we’ve got butter and a sugar in the pan, excuse the noise, mix it up really good and perfect. Okay, that’s all creamed up, nice enough, got to add all the eggs on a low speed; I think brides like to think that they can, well, of course they can have anything they want; they kind of go through arrange and everything, I mean, I do, do cakes that are coming in multi-color polka dots, some brides are really drawn towards that one, and yes I’ve done that cake most of the time with white polka dots; and the same with sugar hat, some sugar flowers, it generally tends to be the traditional designs that are the favorites.
Now I’ve just put at the flour that just needs to be sifted in so that makes the cake nice and inviting fluffy. The favorite designs for this summer I’d say are the individually iced mini cakes, I’m doing them every single week; the designs can range from blueberry simple cakes, they’re just decorated with a bunch of flowers to multi-colored polka dots to covered with hats and red satin ribbon.
And now we’ve just got to pop it into this cake tin; ready to go into the oven, yummy; do you lick spatula?
I meet with clients here, are planning the happiest days of their lives; so it’s not to be pleasured to be involved to nothing, I can just be a tiny part of that by making their wedding cake and when it’s finished I get so many thank you letters and people send me photographs of them cutting the cake, and it’s just lovely; it’s lovely to get that all people thanking, lovely to be a part of it.
