Dani Spies: Food is an expression of love. So what better way to express yourself then to get in the kitchen and whip up something special for that someone special. So for this quick bite I am making both coconut and almond chocolate covered strawberries and here's all you need, 6 ounces of dark chocolate, 16 ounces of strawberries, washed and dried really well, a cup of shredded coconut and a cup of ground almond.
Okay. So to get started, I've got baking sheet here lined with a silpat mat and all that is basically a re-usable piece of parchment paper. Then I've got some coconut and my ground almond, those are ready for dipping and we've got our strawberries right here. Now, in this pot, I've got a couple of inches of water simmering nice, nice bubbles coming up and all I am going to do is create our own double boiler by popping a bowl right on top, no fancy equipment needed.
Then, to melt our chocolate, we'll just pop it right into the bowl and give it about eight-ten minutes. Now, with the double boiler, the only thing you want to be careful of is not to let the water actually touch the bottom of the bowl because that could get too hot. Really all we need is for that steam to rise up and melt the chocolate. It's been about eight minutes and my chocolate is all melted down, so I am ready to start dipping my strawberries.
Now what you want to do is just pull up the greens on top of the strawberries and then grab them and that's going to be where you're going to hold your strawberry while you're dipping. So all you're going to do is plunge your strawberry right into bowl and twirl it around so you get a nice even coating, you are going to leave a little bit of the red sticking out at the top. Then give a couple of seconds just to let the extra chocolate drip off the strawberry. Then, all you want to do is take your strawberry belly side down into your topping.
I am going to start with my coconut. This time we'll go belly down right into the almond. Ladies, let me tell you a little secret, if you make these for your men, you don't even have to worry about lingerie. You could go ahead and hang out those granny pants, and he still won't be able to keep his hands off you.
Now we'll just pop them in the fridge for 30 minutes so they can set. It's been 30 minutes. So our strawberries are all set and looking good.
