Speaker: Hey guys I am Danni Spies and for this quick bite, I am going to show you how to make my Chicken Tabouli. Now, Tabouli is middle eastern salad that's usually served as a side dish and it's made from Bulgur Wheat. Today we are going to add our own little twist. We are going to fill in some shredded chicken and some chick pea and we are going to take it from a side dish to a main dish, that would be great for either lunch or dinner.
All you need are Bulgur Wheat, parsley, mint and scallions, garlic, tomatoes and lemons, chickpeas, shredded chicken, extra virgin olive oil and salt, pepper to taste.
So, in cooking with Bulgur Wheat just remember this, two parts water, one part Bulgur Wheat. So, today I am working one cup water, one half cup Bulgur Wheat. So, while our Bulgur Wheat is cooking, I am going to combine the rest of our special ingredients into our bowl. Starting with chopped garlic, sliced scallion, sliced tomatoes, chopped mint and parsley and a gist of one lemon. About 15 minutes later my Bulgur Wheat is ready and we are going to add that into the bowl as well.
Once I mix everything together I season with salt and pepper before adding my chickpeas and shredded chicken. We will finished it off with some extra virgin olive oil before giving it one last stir. The chicken I am using today is simply a rotisserie chicken that I picked from the glossary store, brought home and shredded it myself. It's a great little trick to have in your back pocket when you are trying to make a quick bite.
Once we plate it we are all ready to go. Just be sure that not one bite goes to waste. So, light and refreshing. This salad is not only delicious, but nutritious as well.
