This guy knows what he is doing. His way is the correct way to make sushi rice & sushi rolls. Noticed his bamboo mat is covered in saran wrap. That is the way all sushi chefs do it.

Making Tuna Maki

Speaker: Now, I'll show you the roll sushi, it's called Maki-sushi. This is dried seaweed sheet. This is sushi rollers. A good amount of rice. Squeeze, squeeze, squeeze, squeeze. Give it a one, two, three. Put a little bit of wasabi inside. Next, take a maki, it's called tuna roll. So just one turn, like that. Fold the sheet, roll one, two, three. Then cut up, make a half, one, two.
