Leila: Welcome to watchmojo.com, I’m your host Leila. Not too many people know about Mauritania. Join me inside at La Khaima Restaurant for a bit of culture information about this country. I’m, here with Ulds Atzich, could you just tell us first of where Mauritania is?
Male: Well, Mauritania is in West Africa between Senegal, Mali Morocco and the Atlantic Ocean.
Leila: Can you tell me what’s La Khaima means?
Male: La Khaima means “the tents” and the restaurant made different tent from different area in the Mauritania and you can see it in the war. And the tent is the house for the Nomad people.
Leila: Have you always liked cooking?
Male: Yes, I like cooking. I like to eat good food. The first thing, it was for myself, I like to eat fresh food and to share it with the people.
Leila: How important is food in the Mauritanian culture?
Male: The Nomad people, sometimes you look for someone to invite him and his honor to share with him a food and if you don’t find anyone in three days in that area, you’ll move from that area to other place.
Leila: Can you tell me some of the most popular dishes?
Male: We have a lot of Cheboygan which is the fish dish with rice and a lot of vegetables. It’s very tasty and it’s a slow food. It take six, seven hours to cook and sometimes I have a problem to tell what is the name of the plate goes. It something you just inspire what you have. The vegetables is just a kind of name in West Africa and the Indio add to the rice which is going to take all of the taste of the fish and the vegetables and this is a slow food around four or five hours to prepare it.
