Mexican Dishes
Fiesta today is going to start of with a creative fiesta fondue and then we’re going to make some Mexican pizza. So, we need to grab some cheddar cheese and just a little bit of milk for our fondue and also a can of cheddar cheese soup. This makes the most wonderful fondue you have ever seen. It’s rich and it’s creamy.
After your cheese soup, what you want to put in here is just about a cup of milk. And I want you to turn the burner on and keep this up just a little bit. In fact I'm going to use a whisk with this to make sure that I combine everything together. And to this, I'm also going to add just about a cup of salsa. This is going to give it a lot of possess which is what you want and just put your cheddar cheese right in here and put all in. And stir this occasionally while it sets up so that the cheese doesn’t stick to the bottom of the pan, so keep an eye on that.
And while that is happening, I've already started cooking some of my chorizo for our Mexican pizza. We’re going to take store bought pizza crust and some refried black beans so make sure you get the black beans instead of just the normal refried beans, some Mexican cheese, make sure it’s Mexican cheese. And just lay this pizza crust out on some aluminum foil on a baking sheet. And the black beans are absolutely fantastic. This I love in the morning with eggs over medium, that’s really yummy.
Now, with the chorizo that’s been cooking over here, I'm going to add a little bit of salsa. So, although we’re not going to put the salsa on top of the black beans or on the bottom of the black beans, we will marinade this chorizo in it. Look at the fondue. It’s setting up nicely. It is starting to melt. This is going to be fantastic. Look at how think this is getting. Okay. I just want to take these pieces out and lay this onto the black beans just like you would pepperoni. Look at this. We’re done here. And I'm going to set this to the side, turn this off. Let me finish my pizzas, get those in. Okay. We’ll put our cheese on that, just pre-shredded cheeses, I always love to use this. It’s a great time savers. Spread that all the way around the top. It’s going to make the most wonderful pizza you have ever tasted.
Now, this is just going to go in the oven on 350 for 10 minutes and I already have fine cooking down below so let’s see how great those look. Oh perfect! These are ready to be eaten and I am just the girl to do it. Now, before I take those off, I just want to pour this into our fondue pot.
This is going to be a fantastic centerpiece for my table that everybody can enjoy. Now, I cannot wait to taste this. This and a margarita and you are going to have a perfect evening. This is so good. You could dip this into the fondue.
On the top of this, what I want you to add is just some shredded lettuce and then you’re going to put on here just a little bit of tomato and crunched up tortilla chips. And then on the top of this, add ranch dressing and can I tell you how wonderful this is? Just take your ranch dressing and then go over the plate just like this and you have a wonderful Mexican pizza that everybody is going to go crazy for. You can put some hot salsa on here with some chopped up avocado. That would be fantastic. But I want to taste my fondue. This is absolutely beautiful. I know it’s going to be perfect. Dip this. Look at how creamy this is. Delicious!
