Bobby: It’s time for the black eyed peas out, what do you call it?
Sunny Anderson: Okay. This is Sunny’s Money Salad. A lot of people don’t know the folklore behind eating black eyed peas on the first day of the year. The more you eat, the more prosperous you’ll be in the New Year. And so I thought, I think it would be really great to do a black eyed peas salad and call it my Money Salad.
All right so we’ve got about three tablespoons of some lime juice in there. You’ve got about a quarter of a cup of your red onion, some cumin.
Bobby: How much you want? Is that good?
Sunny Anderson: A little bit more.
Bobby: Alright.
Sunny Anderson: Yeah, yeah, yeah and then pop in the fridge really quick and get out some veggies. I think we’re got some celery in there.
Bobby: Celery and cilantro.
Sunny Anderson: And cilantro, I love cilantro. So, the celery goes in here.
Bobby: You put hot sauce in now?
Sunny Anderson: I put the hot sauce in. We’ve got two of the red peppers in there. You are so fast on that knife. I’m going to go ahead and drain and rinse two cans of our black eyed piece about 15 oz. per can.
Bobby: All right, I just pour up some cilantro, you like the leaves whole right?
Sunny Anderson: I love the leaves whole. Yes, right into our bowl here.
Bobby: Put some oil.
Sunny Anderson: A little bit oil, canola or vegetable, something’s that is not going to add flavor. Yeah that’s pretty good and then the only thing that’s missing is our ginger. Let me get that in and I’m going to give it a nice toss.
Bobby: Any salted pepper, you usually—
Sunny Anderson: I like the salt and pepper right at the end so give it a taste. I trust your palates.
Bobby: Thank you.
Sunny Anderson: This is looking really good. Look and you’ve got the colors of Christmas, you know what I mean? Red and green.
Bobby: With some ginger.
Sunny Anderson: Yes, I love ginger.
Bobby: That smells great.
Sunny Anderson: See how the lime is working out? See if the ginger is too crazy, here you go Bobby.
Bobby: Thank you.
Sunny Anderson: Get some salt.
Bobby: You know it has that really nice and fresh flavor to it. Delicious.
Sunny Anderson: It is fresh. Thank you, Bobby. Bobby is giving me love.
Bobby: That is so good.
Sunny Anderson: That looks like it might be good to go and this is simple, this is it.
Bobby: Do you plate this is a different a—okay.
Sunny Anderson: Yup, here you go right here and it’s ready for you holiday crowd.
Bobby: Absolutely gorgeous.
