Jill, only God knows why you substituted broccoli for leaks in this dish, I have no idea. You’re probably afraid of cut them and cook them, pay close attention and I’m going to show you how; that we’re going to cut up this bottom here, cut off the top, and this right here is really the only edible part of this leak. Don’t be afraid to cut me Jill, eat me, I’m really delicious. Cut it like that, just like this Jill; really, really simple and really, really tasty. And Jill, be sure to wash these leaks, you’re going to find a lot of dirt on them. We’re going to take some things out and we’re going to put some things into your recipe. Let’s get started.
In a hot skillet, pour in your olive oil. Jill, it takes 7, 8, maybe 10 minutes to caramelize our vegetables but be sure you take the time to do so because when they’re nice and brown, they take on a whole different flavor. Jill, what with our pasta be without a little white vino? While our wine is reducing, what better time than to put in our sun dried tomatoes and reconstitute them. Jill, you want to reduce this wine by half before we add in our plum tomatoes. Jill, while our sauce is cooking and all the flavors are infusing, what better time than to cook off your pasta, be sure to salt your water once it comes to a boil, it should taste like the ocean then add in your pasta. Okay Jill, while our pasta is halfway done, we’re going to add in our baby spinach, our fresh basil, and adjust seasonings. Oh yeah Jill, let’s put this bad boy together, alright Jill you ask for a pound of pasta, you must be feeding an army.
Jill, so good and so easy to make, don’t be afraid to use leaks, get rid of that broccoli, try using some spinach and some fresh basil and tomatoes and you are going to love this pasta.
