Male: Hello, welcome to Le Gourmet TV here with Shari Darling, and we want to talk about your book Orgasmic Appetizers.
Shari Darling: Okay.
Male: But how many books have you done so far?
Shari Darling: I’ve written about eight but also I have ghostwritten book as well, so there’s more. But they’re all books on food-wine.
Male: Okay.
Shari Darling: I'm a wino that loves food I'm not a chef.
Male: Okay and what I really like with this book is that if someone who may not well-versed in wine.
Shari Darling: Yes
Male: It’s very accessible.
Shari Darling: Oh good. Good and I will do with that.
Male: I think that’s great because so many people are intimated by wine.
Shari Darling: Yes.
Male: And you’d try to break it down into something that’s easy to understand, so what was your goal with this book?
Shari Darling: Well, in grade two I was diagnosed with dyslexia and so I was never able to get to the school system crunching and memorizing in order to get through the grades. I have to completely understand something in order to so I can retain it, and then be able to do well on my test on that, and that was a real struggle. So when I got older and I started specializing in wine the old adages about food-wine like you should have you know white wine with fish and have red wine with beef.
I was always left with “why” because just knowing that doesn’t help you learn anything, so that was sort of my, always my discoverers why there are certain things working? So I take a sensory science approach to everything. How your mouth works? Your sense of flavors in your nose and on your pallet and if I can bring it down the layman’s terms then everybody can get it.
Male: And it works.
Shari Darling: Thank you. Thank you.
Male: So what are some really basic ideas that you think that people should get from this book.
Shari Darling: First of all, you can either be someone who loves wine and pick the wine first, and then choose the recipe to match, or you can pick recipes and find the wine to match, so it works for winos and foodies. The chapters are divided by wine style rather than great variety in region, and the reason why I did that is because people will say something to me like, “I only drink chardeneigh”, and being a wine person I’ll say, “Which one? Do you like a really crisp Cheblie or do you like an Australian oaky you know big woody chardeneigh or do you want like when had male or lactic fermentation and sourly aging?”
So one great variety can be produce in so many styles that you limit yourself a lot if you’ll only stick to one region and one style. And once you learn what your taste profile is the wines you prefer you can actually explore the world, and try certain you know what type of wine you like, what style, and so for example if you like to crisp dry way you could get a Vino Verde in Portugal. A dry wresting Anterio, a Sauvignon Blanc from California so that’s would sort the aim of the book is for people to explore their own pallets and find out what they like, and make it really simple.
Male: You give wines styles you don’t actually say he needs to buy this bottle of wine.
Shari Darling: No.
Male: In this winery.
Shari Darling: That’s right.
Male: Which is fantastic because then you can find what you like.
Shari Darling: That’s right and if you notice style of what you like you can go into because a proficient wine person it doesn’t matter where they work whether it’s in a winery in wine boutique or the LCBO and Anterior, the busy store wherever. If you tell them you like a crisp dry white wine they know exactly what you’re talking about, and then they’ll help you explore. Rather than. “What should I drink?” You know. And also it allows the consumer to take control of his or her pallet rather than expecting the wine consultant to tell you want to drink.
Male: Well, and again as someone who’s fairly know wine.
Shari Darling: Yes.
Male: I was always asking why? “Why are you telling me this?” And then I could never get an adequate explanation so many ways.
Shari Darling: That’s right.
