Pad kapow (pork and basil)

Start with chili and garlic in hot oil then add some pork, a little fish sauce, some soy. Thicken with some oyster sauce, now add some sugar, ¼ scoop of water and stir. Time for some crisp green beans and a handful of basil leaves, keep stirring the food has four main flavours. Sweet, sour, salty and not. Remember this when seasoning. As you can tell by the traffic noise, we’re on the side of a road in Bangkok. Now grab your rice and serve.
