Anthony: Welcome to Art of the Drink, My name is Anthony Caporale. And we are working again with Charlotte Voisey. How are you?
Charlotte: Doing great. Thank you.
Anthony: Thank you so much for coming back. You did such a spectacular drink for us last time. I understand you have something completely different for us today.
Charlotte: Yeah. Today, we’re going to go with tequila.
Anthony: Alright. What do we got?
Charlotte: We have got my Passion Fruit Paloma.
Anthony: Tell our viewers what that is.
Charlotte: Alright. So the Paloma is a very popular drink down in Mexico. In fact, it’s more lighter than the margarita. It’s tequila with a great fruit soda. So something like Fresca or Squirt.
Anthony: Okay.
Charlotte: Today, I’m going to make for you a passion fruit paloma so we’re going to stick with tequila and grape, add in some passion fruit juice and a little bit of fresh agave and we’re ready to go.
Anthony: Alright. Let’s go.
Charlotte: So, I’m going start off with one of my favorite tequilas. I’ve chosen the Reposado from the Milagro Range.
Anthony: With the sound of that, that means rested right?
Charlotte: Yeah. And this one is resting it out for about six months. You start to get a little more bodies and a little dried spice in there. I’m going to use 1 ½ ounce of the milagro reposado as my base, and then we can add in the grape fruit juice. I’m going to use a freshly squeezed pink grape fruit juice. So around about an ounce of that. So far, we have a Paloma. And now, we’re going to add in some tropical flavors, passion fruit juice, two ounces, and then I’m going to sweeten this cocktail up just a little bit with some agave nectar.
Anthony: Agave nectar. Tell me about agave nectar.
Charlotte: Agave nectar is really just the honeys straight from the agave plant, and it’s the agave plant that we use to make tequila.
Anthony: Okay. Great. So kind of like the maple syrup of the agave plant?
Charlotte: Exactly. You can see, it’s nice and thick, nice and gloopy. It delivers a beautiful deep rich kind of flavor to the cocktail. And just to compensate for that slight sweetness, I’m going to squeeze in a little bit of fresh limes, so I’m just going to cut a regular wedge of lime and I’m going to squeeze it into my mixing glass and actually drop it in so that when I shake it up, we get a little bit of fun from those.
Anthony: Absolutely. Lots of fresh juices in this, I love it.
Charlotte: I start my glass at the same time. Alright. I’m going to give this a good shake just to make sure that the agave nectar is really mixed in well. Okay. And now, of course I’m going to use fresh chives in my glasses, besides, this is already a little bit worn down and I’ll go straight in to a nice tall glass like so. And just to finish off, because of course the cocktail is not ready without its garnish, we’re just going to cut a nice fresh lime wheel and I’m just going to balance that on the top of the cocktail there. Delicious.
Anthony: Alright. Let’s give this a try. Well, the wine hits you before you taste the drink. That’s fantastic.
Charlotte: You like that?
Anthony: Yeah. The bite of the grape fruit and the sweetness of the passion fruit, it’s fantastic.
Charlotte: Alright. Thank you.

Charlotte: Alright. Let’s go.

Okay. So we’re going to start with 1 ½ ounce of Reposado Tequila.
Charlotte: Right.
Anthony: Cool. Juice is next?
Charlotte: Sure.
Anthony: Two ounces of passion fruit?
Charlotte: Two ounces of passion fruit juice.
Anthony: I think folks may know passion fruit best from the hurricane. The thing that makes the hurricane a hurricane is the passion fruit, right?
Charlotte: That’s right.
Anthony: One ounce of the grape fruit?
Charlotte: One ounce of the pink grape fruit.
Anthony: I love the choice of the pink. That gives it a real nice sweetness. A quarter ounce.
Charlotte: A quarter ounce of agave. It’s quite rich in flavor so you don’t want too much. A quarter is perfect.
Anthony: I think this is going to be new favorite ingredient.
Charlotte: It makes a great margarita too.
Anthony: So you can use this in place of simple syrup especially with anything from South America, Mexico or anything like that, right?
Charlotte: Yeah. Tequila in particular, ground spirits.
Anthony: And we squeeze a fresh lime. I love it when you drop it in. I do this all the time.
Charlotte: You do?
Anthony: I think it just adds a little extra depth to the flavor.
Charlotte: Yeah.
Anthony: Really, all I’m going to do here is just chill it down and aerate it a little bit to get the ingredients mixed up right.
Charlotte: Absolutely, yeah.
Anthony: That’s great. I love the color too. Nice and light but it’s got almost kind of like a baby orange kind of hint to it.
Charlotte: Yeah, that’s a nice hint. Beautiful.
Anthony: Good?
Charlotte: Yeah. It’s perfect.
Anthony: Alright. Let’s give it a try. Salu!
