Perogies to go with your beer

Paul Rinehart: The ingredients needed for the Dough are one cup flour, a pinch of salt, one egg and one tablespoon of olive oil. The ingredients needed for the filling are three russet potatoes and one onion, six slices of bacon and two cups of cheddar cheese, four tablespoon sour cream and parsley. For dough, one cup of flour and a pinch of salt, one egg and one tablespoon olive oil.

Mix flour and add egg, oil and salt. Mix but don't knead. Set aside. Peel potatoes, cutting in chunks. Boil till soft. Chop and cook bacon. Mash potatoes and add sour cream, bacon and cheese and mix it. Roll out dough into sheets. Place spoonful of filling onto sheet and fold. Cut into half moons. Flash boil perogies. Fry perogies. Plate and garnish.
