Pesto Roasted Salmon

Jennifer Bushman: I have found that having a container of pesto in the refrigerator can be really handy. There are so many different uses for it. In this recipe for a pesto roasted salmon, we start off first with some salmon fillets.

Now, in this you could use chicken if you wanted to or any type of meat, because pesto appears so beautifully with just about anything. I am going to put a little bit of olive oil over this salmon. What I want to do is just very lightly coat it. We are going to preheat a grill pan or you can do even do it outside on the grill. The real trick here is make sure that you get the grill hot enough to season the meat and also put a little bit of oil on it.

Even a hamburger will benefit from a little coating of oil on it, so that it doesn't dry out. Just a little bit of salt and what we are going to do essentially what’s called a combined cooking method. We start off meat-side down with the salmon on the pan. What we want to do is just make sure that they are nice and golden brown. And then we will place that on to the cooking sheet.

The trick really is to get to your grill pan nice and hot. Once those are brown then we’ll just put a little coating of the pesto on it and these will go into the oven just to finish. We’re actually are going to serve this with a little white bean salad. I have got some tomatoes and some basil with this. I am Jennifer Bushman with the delicious pesto roasted salmon.
