Pink Piggy Red Velvet Cupcakes
Down Home with the Neelys
Gina: We’re making piggy cupcakes which is going to be so cute I’m not going
to want to eat them we’re going to start with 1 stick of softened butter and
we’re going to add in ¾ cup of sugar.
Male: While you’re creaming that honey, I’m going to get started on our dry
ingredients. I got ¼ cup of cake flour, then I got a ¼ cup of cocoa powder.
Gina: Ooh yeah.
Male: Now baking soda and baking powder and we got a half a teaspoon of each
and now half a teaspoon of kosher salt, alright I’m just going to whish all
of this together.
Gina: Okay so we got that creamy so now we’re going to add in 2 eggs, then
we’re going to add in a 1/3 of a cup of vegetable oil and half a cup of
buttermilk, 1 teaspoon of vanilla extract and 1 teaspoon of white wine
vinegar and what this will do is help the texture of the cake and now we’re
going to add in some red food coloring to give us that what? Red Velvet.
Male: Yes.
Gina: So we’re going to use about an ounce.
Male: Oh there it is baby, here comes the red velvet.
Gina: I love that.
Male: Uh-huh.
Gina: You want to leave a little bit leftover dough for your frosting.
Oh yeah, okay so that’s good. Now I think I’m ready for your dry
ingredients.
Male: Alright.
Oh yeah.
Gina: Now just kind of crank that baby up a little bit.
Male: Girl you know your stuff. One for you mama, okay and almost start up at
the top.
Gina: Okay so this is going to go in a 350 degree for 15 mites and we’ll have red
velvet cupcakes. We’re going to start with 4 ounces of cream cheese that’s
softened which is basically ½ a stick throw that right in we’re going to put
half a stick of butter this is quick too so don’t worry about it just take a hot
set. Hey were you all going you can have finish this frosty so let’s wait 5
more minutes. I need 3 cups of this powdered sugar. I’m going to add in a
½ teaspoon of vanilla extract and go ahead and get our mixture on and get
our cream in together then we can add in that powdered. Pour it in drop it
in there and they now make red velvet cupcakes earlier so we’re going
thick looks like little piggy cupcake.
Female: Does he know?
Gina: Now he doesn’t know. It’s a surprise. Now you can add just a little drop of
food coloring to the mix and let’s see what we get. Look at that aint that
pretty so now the fun part we get to decorate them.
I’m going to do one.
