Preparing the 2010 MTV Movie Awards Menu
Rhiannon Ally: Topping the menu for any star studded event sure takes a lot of work. Lesly headed to Hollywood to get a peek at how one chef prepared all of the delicious food for this year’s MTV movie awards. Take a look.
Lesly Nagy: Well I’m here with renowned chef, John Delucie and we want to know what does it take to prepare a menu of this size?
John Delucie: It takes a lot of people.
Lesly Nagy: How many?
John Delucie: A lot of dedicated—probably about 50.
Lesly Nagy: And how many are you preparing for, you think?
John Delucie: I think 2500 is the number of the party.
Lesly Nagy: And when you’re preparing for menu, what do you think of taste buds? What’s the first—
John Delucie: I think you’re at time.
Lesly Nagy: Time, what’s the fastest?
John Delucie: How much time do you have? Yes. We have the menu sort of set before hand. When you’re going to do some dishes from a line menu and we just kind of how to figure out where—and there’s a lot going on to heat this place. So they have to figure where they could fit me and slot me in and do my food. So that was a big issue.
Lesly Nagy: And you said staff is one of the most important issues. We’re taking photographs with your staff.
John Delucie: They need to be recognized. You did it very, very, very well. Yes.
Lesly Nagy: What are some of your specialties that you’re making?
John Delucie: I think we did 2500 mac and cheese, 2500 Kobi beef burgers, 300 pounds of short rib, 500 pounds of potatoes.
Lesly Nagy: So there’s no diets here, just good eating.
John Delucie: No, that’s right. Let’s hope not.
Lesly Nagy: What satisfaction you get out of doing big event like this?
John Delucie: When you see 2500 people go to all then stations. And we’d win last year and it’s quite remarkable when it all sorts of works and you don’t run out of food. And people seem happy and it’s a very professional kind of satisfaction, gratification. We have bacon chocolate cupcake.
Lesly Nagy: Bacon? Why it’s salty and sweet.
John Delucie: We have cheese cakes which we put in the jar.
Lesly Nagy: Are they cooked right in there.
John Delucie: They cook right in there, yes. And we have—so what we did was we took the cheese cake and sort of turn it inside out. Usually have the cross on the bottom, that’s the graham cracker right there which we’ve just toasted and pulverized, put it on top. And then we use a little bit of the strawberry preserves just right on top there like that.
Lesly Nagy: This is all about presentation.
John Delucie: It’s all about presentation of it’s really, really cake.
Lesly Nagy: All those really, skinny celebrities. They’re eating dessert, is that what you’re telling me?
John Delucie: I bet you, they are.
