Giada's Chicken Parmesan
Male: What we’re going to do today is we’re going to put together a chicken
parmesan using stuff in your pantry. We got two onions chopped up, and
we got about three cloves of garlic here and you just get the olive oil right
there.
Female: Yes.
Male: Okay add some olive oil in the bottom of the pot. Just give a little --. Okay
so we got the onions, garlic, we will saute this stuff down. I’ll tell you, as
soon as you started putting onions, a little olive oil, the smell is great and
the kids start running.
We’ll get some fresh basil, right there. We’ve got that on your garden.
Female: Okay.
Male: I think, I probably ripped up, I don’t know maybe four or five leaves. Just
rip it out like that. Alright, so we’ve got some olive here right.
Female: You’re going to put them in whole.
Male: Yes. Put it as whole, just like that. You do not have to chop everything up.
I know it was kind of nice. I will just sauté this stuff down nice. This is
going to be the base of our tomato sauce.
Female: Great I will never put, thought I’d put olives in there, but I like that.
Male: Oh, this is going to be delicious. So we’ve got bay leaf here. Now one
maybe two like that. We will cook the onions down until they start to get
translucent. Nice and sweet, kind of developed their natural sugars. Then
we will toss the tomatoes in. Alright we will take our whole tomatoes and
then put them on the crusher.
Whole tomatoes, boom. Like that, now basically, I’m just stick my hand
on the bowl with clean hands right. Now as we got that sort of — we’re
going to come to the old crusher like that.
Female: Am I going too much?
Male: It is good. It is good. Okay so, we’re going to add this tomato whole at this
point right. So you got your whole tomato crush, hand crush right. Be
careful so like there’s nothing splashed like tomatoes.
Female: Right I know, pretty pink shirt.
Male: Yeah. I’d do it away from me now while pouring it.
Female: I will stand back, so I look (Laughing).
Male: Careful. See that?
Female: Nice.
Male: Then now, we are going to add a little bit sugar, there’s some sugar back
in someplace here, a little bit of sugar like that, salt. The secrets of good
marinara sauce, is you want to keep the flavors really kind of bright. It’s
not like we’re going to cook this down for long periods of time. So I want
to taste that sunshine.
Female: We are not going to cook it a long time.
Male: No, We will cook this for like 15 to 20 minutes, we’ll shut it off.
Female: Really. Okay.
Male: Alright so we are going to put the other chicken parmesan, to kind of
putting everything together. Okay, so first we got to start with the flour.
Female: Put the eggs in this one?
Male: Yeah that will be good. So we got some salt, pepper, and a flour mix.
Three eggs, we’ll have a little bit of water to kind of thin that out.
Female: Before to start, break it up a little bit.
Male: Good. Perfect. Alright so we got some bread crumbs in here—not too
much, so we don’t waste a lot of it, we have parsley. We will put some
basil on top. Basil, please grab some basil there.
Female: Okay. Nicely done.
Male: Thank you very much. Okay. Fresh herbs and the bread crumbs like that.
Female: In the crumbs, okay, good.
Male: In the crumbs baby. Salt, pepper, and also we got one more a little secret
sneaky thing and great. I will check this up. We got some a little it of
parmesan cheese. Now that looks like it taste good.
Female: Yeah, it absolutely does.
Male: Delicious, not boring.
Female: No. Yummy.
Male: Okay so we got dry, wet, dry. Our flour, our egg wash, our bread crumbs.
Let us start. Now, the moment we’ve all been waiting for, Carry pounds
the chicken. Okay so we got some, we got chicken breast, right?
Female: Okay.
Male: Nice and thin. Okay so we got a nice big fat sautéing pan. We’re going to
pan, stir the chicken breast, put the tomato sauce right on top of the whole
thing. And then some good cheese, then I put the whole the thing straight
in the oven.
Female: Oh. Save on dishes.
Male: Alright flour, seasoned flour, alright and we take the egg wash, see how
this going. And it’s just enough to hold the bread crumbs on. And I put
them like that. Okay so we got our, our sauté pan over here, a little bit of
olive oil. Alright so we got a nice little haze on the top of our oil, and we
are going to take our chicken breast like that, and just drop it in.
Female: Nice.
Male: Nice one. Okay, check this out. Are you ready?
Female: Yes.
Male: Drum roll. Oh look at that. How beautiful right?
Female: Bravo. Bravo. Bravo. Nice.
Male: Nice.
Female: Yummy. Yummy.
Male: That is nice. Alright so we are going cook this for two—four minutes in
the other side. See this side, nice and brown too, and they will be cover the
beautiful marinara sauce and lots of good buffalo of mozzarella cheese.
Female: Yup.
Male: Smell, tomato sauce, so I am going to my pan, so it is coated, the sauce
like that, beautiful.
Female: We got some good, buffalo mozzarella cheese, which I like.
Female: Do you need parm on that?
Male: Yeah. Chicken parmesan and you need some good parmesan right? Am I
right?
Female: You are right.
Male: What is chicken parmesan with the parmesan?
Female: Not only cute but smart.
Male: Grate some cheese on top of the whole thing.
Female: Big grates, I mean, or shall I go with the?
Male: Whatever you want. What ever it makes you feel good. We’ve got fresh
basil, a little bit of olive oil.
Female: Good enough for company.
Male: Yes. See nice, fresh, cool stuff. I guarantee you, kids will eat this and they
will love it.
Female: Yeah.
Male: This will go in the oven, 15 minutes tops, right the whole thing. I just want
the.
Female: We’re going to broil it or just high oven heat?
Male: No, just a high oven. I want to start the melts and this stuff now. And then
we’re actually serve a this little spaghetti.
Female: Perfect. Because you know what, my son will like that.
