Hi guys. Welcome back to Dede’s Mediterranean Kitchen. Today I’m going to be making Roasted Red Pepper Hummus. Now this is part of my new series of videos called Mediterranean Americana. It’s a fusion of Mediterranean food with American food and a little kick.
Now what you’re going to need to start off to make the roasted red pepper hummus is a can of garbanzo beans. Anything from a 16 to 20 ounce can, will work with this recipe. You’re going to need a half cup of lemon juice, a quarter cup of yogurt, two to three cloves of minced garlic, a little bit of cayenne pepper for a kick, and one roasted red pepper. I’m going to talk to you more about roasting your red pepper. You’re also going to need a little bit of olive oil and some parsley and black olives for garnish.
Now you can buy roasted red peppers in a can or in a jar or at the grocery store, or you can roast it at home fresh. I like to roast my red peppers at home. All you need is red pepper, put it under the broiler in the oven, just make sure you stand by it and turn it so that it doesn’t overly roast. I have one here. I put it in a plate or you can put it in a plastic bag and then cover it so that it’s easier to peel off the charred part. Just like that, it’s going to shrivel up a little bit, but it makes it really easy, look at that. It’s so easy to peel off the skin, just like that, and so peel off your red pepper.
Now roasted red pepper hummus can be served the same as hummus, it can be served with a lot of, you know meat dishes, chicken dishes with pita chips, with toasted pita, with plain pita. You can even serve it with tortilla chips. I’ve seen that as well. It’s a really, really, really good dish. It has a lot of flavor but hummus naturally has a lot of flavor. So I’m sure you guys are really going to love this thing. And just make sure you do remove all of the seeds. You don’t want any seeds in your hummus. So just like that.
You want to place it in your food processor. You are going to need a food processor for this. I’ll give my hands a little rinse. Next what we’re going to do is we’re going to add the can of garbanzo beans or chick peas, it’s the same thing. We’re going to add our minced garlic, our yogurt. Now I have in my other hummus recipe, I do have that you add a couple tablespoons of water. Because the roasted red pepper adds moisture to the hummus, you’re not going to need to add any additional water to the dish. Add our lemon juice. I want to add a half teaspoon of salt. I’m going to add a little bit of cayenne pepper. If you don’t like cayenne pepper, you don’t like anything spicy, you don’t have to add any. I just like to add some. It gives it a little bit of a kick. A little bit more flavor. I’m going to turn this on and blend it before we add the tahini. I like it because it helps smooth out the texture before you add the tahini, because when you do add the tahini then the texture becomes much more thick. I like it this way so try it.
Ok so I blended it and it’s a nice orangey red color. I’m going it add about a half cup of tahini. Now you can buy this on my website if you can’t find it at your local grocery store. I’m also going to add about a tablespoon of olive oil just for flavor and then give it another pulse. Ok, so let’s give it a little bit of a stir, and you can check the consistency now. If you see that it’s too wet, you can add some more tahini, and tahini is a thickener. So it will help thicken it. I’m going to add just a tablespoon or two more and then give it another pulse.
Ok, our mixture is done blending. I’m going to clear out this space here and I’m going to show you how to serve it. Here’s our pita bread. We have some parsley for garnish and some olives. I thought black olives; you can even use green olives. It’s a nice contrast with the color of the hummus.
So you’re going to pour it into your dish and then spread it out. Let me keep this for you. So you’re going to spread out just like that. I’d like to add some parsley first. I like the green, it’s a nice contrast. Black is a nice contrast. You want your dish to be colorful and presentable because people like to eat things that are pretty. So I mean you can’t just put it in a dish and serve it like that but your guests will be so much more impressed if you put a little bit more effort and decorate the dish. See, just like that. You put a little bit of olive oil. And there you go, that’s it. It’s so easy. This is your roasted red pepper hummus. It’s a nice variety to the hummus.
