Sausage and Broccoli Rabe Soup
Today, I am cooking up one big part of relief from a rainy day, my sausage and broccoli rabe soup. I’m up to a pretty good start. I’ve got some carrots, garlic, one potato chopped small and about a pound of Italian pork sweet sausage. One reason is super show comforting.
Now, I’m going to just take half of this and kind of put that in. Then, with the other half, I want to show you cool trick. Anytime you’re making a super beans, if you want it to be nice and thick, and I love a good fixed soup, mash up a little of those beans. Just get a fork down in the bottom of the can there and turn it in to a piece. See there, how it’s almost to paste that will really thicken this soup up.
Now, these are already washed, big-time saver. I’m always saying it but hey these little things, they’re the things that help you quick cook all week long. You wash up your produce when you get home on your big shopping day, and then you’re ready to cook all week.
Broccoli Rabe is actually related to cabbage even though it looks just like craft between broccoli and spinach, and has a really unique taste. And it’s so terrific with garlic and sausage, just a killer soup.
I’ve got six cups of stock. Get that in there. And then I’ll finally be able to get my flame back up and under. Now, when I add the stock, this is a big pot of soup. I want to heat through quickly because I like to get to the eating. You know me, I’m not a very patient girl.
So, once I get the liquid in there, I put the lid on it and raise up the heat. Bring it up to a boil as fast as possible. Then, I can knock heat back, could you just let it simmer until those greens break down a little for me. We’re just going to stir up. Release all the drippings on the bottom of the pan there. I’ve got a little bit of sausage down there. I do not want to lose that flavor. I do not want it to burn. Look how nicely it thickened up by adding some of those crashed beans to it and the potato excellent, garlic and onion there. You could certainly use Turkey Sausage if you do not do the pork thing.
Tons of flavor, so comforting, men this is going to warm you up from the inside out. You’ll forget it’s raining outside. Cheese curls all down with the top that are melt in. Excellent!
