Thank for checking out another episode of fixmyrecipe.com. Chef Billy Parisi here and our new fix goes to Allison of Chicago, Illinois. She submitted recipe to us for a Shrimp Scampi, wants to know if we can change it. She says it's boring, she wants it in a Latin style. Don’t worry Allison I’ve got an awesome fix for you. Allison, I can t take away the authenticity of this dish without using shallots or garlic, so in a smoking hot skillet with a little bit f olive oil we’re going to go ahead and caramelized all some chopped garlic and chopped shallots.
Ones those garlic and shallots are caramelized at this point, we’re going to add in our shrimp and cook them to their just about done and then a little bit of fresh cilantro and crashed red pepper for that kick. And we are going to use the zest of a lemon, lime and orange. Allison while our shrimp are cooking, we are going to cook off some vermicelli because I want to put the shrimp’s scampi on something. If for some reason, you can’t find a vermicelli, look for fideos. You should have no problem getting a hold of it.
You see that our shrimp are just about done and now we’re going to deglaze a little with a little tequila. Oh, and next ones that’s all gone, we are going to add in a little bit of vegetables stock, season it with salt and pepper, finish it with whole butter, we are going to pour it right this vermicelli and man, I got to try some of this.
Oh wow Allison, tons of flavor. You get that garlic that crushed red pepper, the fresh zest and cilantro. You are absolutely going to love your brand new Latin style Shrimps Scampi.
