Today’s menu is “Smo-fried Wings and Cajun taters”
Clean and separate wings, saving tips for stock, cut between the natural joints and they will cut easily. Season with your favorite spice and let sit at least 30 minutes, I used our Cajun Blend®.
Indirect heat of 180-230f for 20 minutes using your favorite wood for smoke, I find that maple gives just the right amount of flavor for our family.
Time to make the sauce. A very basic yet tasty sauce: ¼ cup melted butter, ¼ Frank’s hot sauce, 3 tablespoon vinegar.
Time to take the wings from the BBQ to the fryer. Wings will take 5-10 minutes depending on the temperature of your oil.
