Spicy Roasted Chicken Salad Recipe

Hi this is Nina Simmonds with Spices of Life. And here we are, roast chicken part 2. So you have your roast chicken, what do you do, second idea is you make a gorgeous salad with a spicy salsa. You serve it with greens really easy. And then you add some corn and then using some frozen corn, just blanch it with boiling water. We have some cherry tomatoes that are going around the corn. And you want this to be colorful, attractive. Next, we have some pink beans or you can use painter beans, whatever. And those will just go on top. You can sprinkle them, make a design. Then you have your roast chicken which will just sprinkle all over. We have last but not least, some avocados, ripe avocado cut into pieces, just sprinkle it around. And all of the recipes are in Spices of Life. And finally, we have a fresh salsa. I’m just pouring some salsa right into the bowl but to make it a little homemade, I have some chopped cilantro, chopped fresh cilantro, about maybe 2 or 3 tablespoons. We will just going to mix that in. And then sprinkle a little coriander over the top. And there you have it, roasted chicken with beans salad and spicy salsa. Enjoy.
