Spinach and Feta Omelette
Sarah Cox: Hi! It’s Sarah Cox here. Welcome to my Low Carb Vegetarian Kitchen, where we make food fast, without being fast food.
Now today, I’m going to make a Spinach and Feta Omelet, which is going to be really delicious. I’m going to start off with just one egg. And, I’ll put about one and a half tablespoons of powdered egg whites. And, so that I’m going to put in one ounce of milk, this is just a 30ml of one ounce measuring cup. That’s one-third, and two of water. We are putting just sprinkle of dried parsley, just because I like it. And, blend it together. And, it’s done. Now, what I do is put that into my hot pan, and let that sit for a while. And, just on one half, as I’m going to flip over, so on one half, I’m going to put in, I’ve got an ounce of Feta cheese, which is about 25-30 grams of cheese. Let’s put that on one half there and, I’ll put some spinach. I’ve got some fresh spinach put that on the top here. Then, I just wait for that to get firm and I’ll turn half over. Okay, so that’s getting nice and firm there and I’ll just pick up half of it, and turn it over the top. And now, I’ll just wait again. As soon as its firm, I’ll come back and show you how to finish this up.
