Spoon Cookies
Scandinavia is known for its cookies and Finland’s contribution comes in the form of a classic spoon cooky called Lusikkaleivat. One bite alone suggests the unmistakable flavor of brown butter which pushes these elegant treats into a category of their own.
Start by lining a baking sheet with parchment paper. Once you’ve made the dough from the recipe provided, scoop a bit against the side of the bowl using a small teaspoon, the kind you eat and not the one you measure with. Pack the dough into the spoon and trim out any excess with your fingers. Generally, slide the dough onto the prepared sheet.
Repeat this with the rest of your dough. Scrapping or sliding a spoon against the inside of the bowl to make perfectly spoon shaped cookies. Try to make an even number of cookies as these would be sandwiched together. Bake the cookies at 325 degrees Fahrenheit for about 12 to 15 minutes until they’re just brown.
When they’re finished baking, cool the cookies almost completely on the baking sheet. Then transfer them to a rack to finish cooling. Spread half of teaspoon of raspberry jam on the flat side of the cookie. Now, sandwich it together with the second cookie and place it back on the rack. Repeat until all of the cookies have met their match.
To complete, lightly dust the cookies with confectioner’s sugar. Spoon on the hint Scandinavia at your holidays spend the season.
