Manivan Larprom: Stir-fried Pho noodles is everyone's favorite, also known as Pad Banh pho . How to make Pad Thai or we call it Pad Banh pho.
Soak the noodle in lukewarm water for at least two hours to make sure that the noodles that you select is called Pho which is long and flat and this is a capture of the noodle that has been soaked for at least 2-3 hours. Let's make fried egg strips. So, take one egg, add one tablespoon of soy sauce and mix together. In a wok of high heat add one tablespoon of oil and one teaspoon of chopped garlic.
Flip the eggs so that it is a half moon and then cook the other side as well. Remove from heat and then once it is cooled cut the eggs into strips. Place the egg strips on a plate and set aside because they will be used to top over the Pad Thai noodles.
Now let's make the Pad Thai noodles. In a wok of high heat add one tablespoon of oil and one tablespoon of garlic. Drain the water from the noodles and then add the Pho noodles into the wok. Add two tablespoons of soy sauce and two tablespoons of oyster sauce. If you don't like oyster sauce, you can add any other sauce that is your favorite like mushroom sauce or bean sauce.
Mix the noodles very quickly because the heat is very high and you don't want the noodles to stick to the bottom. Add about 3 cups of fresh vegetables. In this case I have added snow peas, baby bok choy and sweet red peppers. If your wok is too small, you can cook the noodles separately and the vegetables separately and then mix together in the larger bowl and not in the wok. You will notice that the noodles are dry and that they are not cooked. So I need to add about one half cup of water.
If we soak the rice for about 3-4 hours, you may not need to add water to the pan. In this case I have added extra hot sauce and soy sauce and oyster sauce. After tasting you may decide that you need to add more ingredients to the Pad Thai. You should not take more than 3-5 minutes to make Pad Thai and serve the noodles immediately.
If you are going to serve Pad Thai noodles in advance, put it in a large bowl and then serve at room temperature and toss it occasionally before serving because you want the noodles to be separated. Just before serving add the fried strip eggs and then you can also add green onions, cilantro, and crushed toasted peanuts. That is how you make Pad Thai noodles.
