I first heard about a similar receipe yesterday in the fruit market which is why I searched for your video. It was unclear how to eat the artichoke leaves from their description so I was pleased you addressed. However, I am uncertain of one thing. Your video suggests (to me at least) that you eat only the "tip" of the leaf - or - you eat "what's inside the tip". Both additionally imply that the remaining leaf is not eaten and discarded.
