Thanks for stopping by, I am Chef Billy Parisi. You’re watching Fix My Recipe. Most foods has an incredible new meal solution. It’s a stuffed manicotti with a green salad right on the side. I know you’re going to love it.
So I know over the past few weeks, I’ve put chicken, meat and fish and I completely neglected the vegetarians. Well guess what? This one is for you. That’s right, we are stuffing this manicotti shells with tofu and fresh herbs. So, let’s get cranking on this recipe.
In a huge pot of salted water, we are going to parboil our manicotti shells, going to take about 8 to 10 minutes. While our noodles are parboiling, we’re going to go ahead and get started on our stuffing. So, in a large bowl, we’re going to add in some tofu. We’re going to dice up some fresh herbs, throw that in there. Don’t forget to add some garlic, black pepper and some parmesan cheese and now, it’s time to mix everything together.
Now, is the fun part, it’s time to stuff these manicottis without getting that tofu spread everywhere so, let’s get everything in a row. Time to spray with a little bit of nonstick spray into our pan and using a pastry piping bag, we are going to place our tofu spread right in there and now it’s time to stuff. So with your thumb on one side of the manicotti shell, we are going to stuff with these. Well it came off there but it’s perfect; much easier than trying to use a spoon. We’re going to top these manicotti shells off with some tomato sauce and next, we’re going in the oven on 375º for about 30 minutes. We’re about five minutes away from our manicotti being finished and I didn’t forget. I still owe you a salad. So, we’re going to slice up some mushrooms, cut some great tomatoes right in half. We’re going to mix it in with our spring mix lettuce and for a dressing, we’re going to use some lime juice and some olive oil to give it a quick toss and it’s going to be finished. Manicotti is done. Let’s get it out of the oven, plated up, put some parmesan cheese on top and I can not wait to try this.
