To do a stuffed chicken wing, these are always fun. People didn’t know that you could stuff chicken wings but you can. So this is a cleaver, when I’m buying a cleaver I basically looked for a few items, I’m looking for a fairly sharp blade but I’m also looking for a decent amount of weight. What these cleavers are made to do is to go through bone. So what I’m going to do is I’m going to, on the end of my bone I was going to knock off one end of it. Let’s do this twice so this way we can see it for the camera.
Okay, there are two bones on my chicken wing there is a larger bone and a skinnier bone. What we’re going to want to do is push the meat down along both sides of this bone. Like so, once I get all my meat down as far as I can go, I’m going to take this little bone and bend it out.
So this little bone comes out. And then I’m going to turn the rest of this meat inside out. So now I have a completely French bone on one end and I have a cavity to put the stuffing here when you cook this, this are beautiful for ordure’s they’re very nice garnish with the rest of your chicken plate. Because it has a very nice handle for people to hold on to.
We’ll do that one more time, I’m going to bring the meat, slide the meat down to this bones. I’m going to push particular little bone out and then invert the rest of the meat. So that now the skin side is on the inside and the muscle is on the outside that is the stuff chicken wing.
