By the way, HE WAS NOT WASHING HIS HAND! Whoever made this video is a complete idiot. The chef dipped his hand into Japanese vinegar to prevent the rice from sticking onto his hand. The content of the vinegar is a secret... I do not believe it's 100% vinegar, because that'll make your rice sour. Also, the amount of the vinegar mixture to be left on the hand is also a kind of skill...

You called that easy? Did you notice the chef's professional tabbing and squeezing? It takes months or years to master! The angle of cutting of the fish, the size of the rice etc... everything is skill... If anyone can do it right, then what's the point of restaurants to hire a sushi chef?

"if the fish smells bad, that means it's not fresh. fresh fish shouldn't have a bad smell. therefore, you shouldn't be eating fish that's not fresh, especially as sushi"
